With colourful style expressed in both his clothing and his business, Uri Heilik, co-owner of Alloy restaurant, handles the heat both inside and outside of the kitchen
At 33, Uri Heilik says he is living his boyhood fantasy.
“My mom taught me how to cook and I’ve loved it since I was eight,” he says. “It was always my hobby; I just didn’t know if I could make it my profession.”
Childish doubts aside, Heilik is responsible for one of Calgary’s freshest dining sensations, Alloy. And, in the process, he has helped to reinvent what it means to dine in Calgary.
No small feat for someone who encourages the use of the much-maligned “F” word: fusion.
“Some of our dishes have Asian, Mediterranean and Latin all in one dish. But it’s not crazy,” Heilik says. “We don’t want to put things together for the sake of putting things together to be different. It all has to work.”
